Benzaldehyde was discovered in 1832 by two German chemists during the analysis of bitter Almond essential oil. There is also natural occurrence of this molecule in fruits such as Peaches, Grapes, Strawberries and Raspberries.
It is used in perfumery mainly as an Almond or Cherry note, but also to add a nutty facet to gourmand accords.
Beekeepers use it as a repulsive agent during Honey collection in the hives. It is also the characteristic smell of white glue, in which it acts as a preservative.
